Hello, I am currently looking into splittinf my network of ~70 computers into VLANs.

I have different departments:
Graphics
Medical
Accounting/HR
CSR
Imaging

Currently, really no departments share files (much) except Graphics & Medical.

I would like to split them into VLANs (not using cisco, wasnt sure where to post this) and am a little confused as to how i DNS and DHCP would work. All clients need to be able to log onto windows 2000 AD. I have read a little abou 802.1Q tagging, but am unsure how it'll actually work. Also, regarding DNS, name resolution will be done via DNS but how do the clients get the DNS server address (via DHCP its usually the internet resolving DNS server). TIA...

You will need a layer3 switch or a router to do the vlan routing.

Just setup multiple DHCP scopes on your Win2k box, with a different subnet for each vlan. With cisco you forward the DHCP requests w/ the ip helper-address command, you'll have to find an equivilent for that with your switches.
