I would like to rename some of the current domain users' names, but what worries me are the documents and settings folders in the client PCs. In case i create new users with the new names from the server and then try to logon with the new account from a PC that someone has already logged on with an old username, will there be only a rename or it will be as if there is a new user?
Is there a user rename procedure?

If you rename the account when you log on to the client pc the pc will see the account as an existing (renamed) account and NOT a new account. I just tested it on one of my client accounts/pc :-)

Display names and login ids are only attributed to the user object which is identified by the system by its GUID. Renaming the account only changes the attributes but not the GUID.

Think of it like painting your house a new color. The address remains the same, it just looks different.

I hope you find this post helpful.

So where shall i rename it from? The user namager from SBS?

Correct.

I hope you find this post helpful.
