Tried of Defraging and Rebooting Exchange everyday

I'm currently experiencing a problem with my exchange server. If I don't defrag and reboot the system it has the tendancy to crash on me. I wish I had a clue on what is going on. I check the event viewer after I reboot the system, but there is no entry on errors just informationals. At this moment I'm running the Exchange Health monitor and the Exchange Load Monitor. The only thing that gots my curiosity is the on the health monitor the processor and memory are spiking when no load is being process. If anyone out there can help please do.
 
The Exchange has a crash on you, hehe, not bad. Have you set up the auto on-line defrag on daily basis ? How many other applications running on the same box? How much RAM and HD space left? It's not about whether you can do it or not, it's about HOW

The only application running on the server are Exchange 5.5, Norton Antivirus Corp. Ed. and Office 97 Pro. I have the machine maxed at 512 on memory and I have 3GB left on the C:\ and 16GB left on D:\. Do you have any idea on what is going on. My co-workers back at HQ have not seen this problem.
