Testing router configuration

I currently have a VPN link between two sites using Cisco 515 PIX's. I now want to remove this and only use the PIX for internet access. I have bought two 1721 routers to connect the sites via a dedicated leased line. I have set up the routers with what I think is a correct configuration, but I'm not sure how to test it without effecting the VPN link. I have tried just changing the Default GW on just one machine which gives fairly inconsistant results and doesn't always route Internet traffic onto the PIX (I added the route 0.0.0.0 0.0.0.0 'PIXIP' command into the config). All machines (Windows based) currently have the PIX set as their default gateway and each site has it's own IP structure and range.
