Tempurature Monituring

I am going to but a digital doc 5 and it comes with 2 "flat" probes and 6 "bulb" probes, i want to put the flat ones on the processor and the video card, and i am wondering the best place to put them, i already asked the quesiotn that if i were to put it between the sink and the chip and u all said no to that idea so i am wondering if i could mount these sensors behind the chip on the video card, and behind the CPU (like on the other side of the board) and would it still give good readings and all that jaz.

by "on the other side" i mean on the other side of the actual MOBO or video card, and im wonsdering if this would give good readings.
