Streaming Newbie

we are starting to test the streaming capability of our Video Conf gear (polycom) using apple quicktime.
We are streaming the File, Open URL toolbar.

Would like to know any tricks to make the quality better on our desktops. On higher end Mac's, it's pretty good.
On our windows machines, it get's choppy.
