Yep,
Just run the setup wizard on the exchange server and select reinstall when you are presented with the screen with all the different exchange components like "messaging and collaboration services", "system management tools" etc.
The wizard then will install enterprise edition over the standard edition without touching any settings.
Be sure you need to do this tough, because there is no way back.
