Sniffing email using Exchange-does anyone understand the protocols?

I need to better understand how the protocols layout when a user sends an email via Exchange. I can find lots of information about POP3 protocols, but not stuff specific to Exchange. For example, why does the client "Bind to End Point Mapper" or "Request Service Locator", and what's an "OpNum"?

Can anyone point me to good whitepapers, or just give me a rundown on how this works from the protocol level?
