SMTP Remote Relaying Authentication

I wish to route all internet outgoing mail through a public relay facility. This facility naturally requires authentication. I am using Outlook 2002 as the e-mail client. When an Exchange account is setup in Outlook 2002 there appears to be no facility to store authentication info to be passed to the outgoing mailserver. Similarly I am not able to find anything similar in Exchange. Can anyone suggest how I might achieve relaying my outgoing mail through an external server?
