SMTP authentication

I know I am missing something. Does anyone know how to turn on SMTP authentication for an Exchange 5.5 server running on Windows NT.
 
It is amazing to me that Outlook Express allows for authentication requirement for SMTP, but I can't find out how to setup Exchange using two different books, online references and this group.
 
I have a similar requirement (if not the same) as MToombs.
On the users clients the outgoing server is set to the Exchange server. User/password authentication to use the Exchange server is stored in the 'my outgoing server requires authentication' area on the Outlook clients. Instead of using DNS lookup I then wish all outgoing mail to be relayed through another host. My question is this: Where is the authentication to use this host stored?
