In the smb.conf file, add a line like this for each share. Put the shares after the global config section near the middle or bottom of the file.
[sharename]
comment = 'descriptive comment about the share'
path = /pathtoshare
writeable = yes|no
guest ok = yes|no

...oh, and make sure to restart Samba whenever you make changes to the smb.conf file....
/sbin/service smb restart
