Setting up outgoing SMTP server

Currently we our email system set up so that all incoming mail goes to an SMTP server that filters out viruses and spam. This SMTP server is then configured to route the mail to our Exchange 2003 server. This of course is only for incoming mail. I would also like to configure our Exchange server to send all outgoing mail to this SMTP server before it sends to another email server in our network or out our firewall to external email servers.

How do I configure the Exchange 2003 server for all outbound mail to go to this particular SMTP server?

 
Thank you that worked. I was able to set up an SMTP connector and a smart host to send any messages for a specific email domain to a secondardy SMTP server which checked for viruses and spam before sending it out.

However, after I did that, I no longer see an entry in the queues for this email domain. I use the queues to troubleshoot email issues.

If I set up a SMTP connector that sends all outgoing mail to this smart host, will I not have any of these in my queues? Is there somewhere else I can troubleshoot these if I need to?
