I know you enable the exchange server to be able to send out-of-office messages outside of the internal network to internet clients.....but how do u enable the client when there outlook profile is setup for internet email using a pop3 client to the exchange server. The out-of-office assistent only shows up the you setup exchange server in your profile . Can you do this on the server also ?

One way to do that is to have the user log i with OWA to set the out of office, otherwise, no. If the answer is here, mark it, others can benefit from it too.
