Bit of a problem.....I'm running exchange server 5.5. My CEO wants any e-mail being sent to a custome recipient to be also sent to him. You can't set this for a custom recipient. What I had intended on doing was to set up a mail box for the recipient on my exchange server and set both parties as alternative recipients, however I can only select one alternative recipient per mail box. Is there any way around this?

Cheers

Yes there is.
Create a distribution list that contains the two (or more) recipients you require mail forwarded to, and set this DL as the alternative recipient of the original mailbox.
Voila!

would not setting up an SMTP address in the CEO's Email Addresses tab in his account do the trick?

If you mean putting a duplicate address in the CEO's email address list, then no. It's not possible to duplicate addresses within an organisation.

Well.. I am assuming that the custom recipient in this case is a POP account other than a company address.

My question was more in this vein: if you have another pop account ... CEO@popserver.com .. can you add that pop address in the smtp list in the CEO's Exchange account? You can try it. That would be one of the first things I would do.
