Service Tech for Aloha Systems...

I have been approached by several restraunts/bars/clubs in my area about doing all of their IT work. I am familiar with the Aloha system. I am looking for any tips or suggestions on how to acquire the needed restore discs(which the owners have lost) and how to do configuration on all new servers for their systems using Windows Server 2008r2(x86). Any help would be much appreciated.
