I am setting up a SQL Server for the first time. Do you recommend installing SErvice Pack 3? Thanks

Assuming SQL 2000 - definitely.
I would also consider going to SP3a.

Absolutely!!!!!!!! If you don't apply it, you won't be protected from SQL Slammer worm.

Also, make sure you give the SA account a very strong password.
