I run 2000 Server and have an Adaptec SCSI Raid controller set up to mirror the two drives. If the primary disk fails, I should be able to boot from the secondary correct?
When you use hardware RAID the OS only sees 1 drive. All data on that drive is mirrored to drive 2, an exact copy of drive 1. When drive 1 fails, you can boot to drive 2. You may need to set the boot order in the SCSI/RAID controller properties or swap drive positions but other than that the OS doesnt care. Unlike software RAID you dont need a special boot disk so you can modify the Boot.ini file. Drive 2 is just used to make an exact copy/mirror of drive 1. You dont need Ghost, thats what mirroring is for. It is a good idea however to make an image of the drive with Ghost to have a second recovery plan.
