I have three packages that I am currently running at 5:00 AM. If I want to schedule these to run at 3:00 AM instead and schedule them to do so, will that overwrite the original schedule or will it execute at 3:00 AM and again at 5:00 AM? If the latter, is it possible to "reset" the packages or do I need to create new ones?

All you need to do is edit the job that runs the DTS packages. In Enterprise Manager, open the server, then Management, the SQL Server Agent, then select Jobs. Douple click on the job you want to edit, hit the scheduling tab, and edit the schedule changing it to 3am from 5am.
