I have several Cisco 2501 and 2514 routers with IOS 10.3 - 12.1. Some have RIP and some have RIP v2. How can I update the routers running RIP to RIP v2?

You need to upgrade the IOS of all the routers to atleast 11.1. To do this, you need to go to Cisco's website, and then go to Technical Support, downloads, and then take it from there.
