Rewriting headers

I am planning to set up our mail gateway to rewrite headers. I have read somewhere that this can cause problems when routing it accross the net. All I really want to remove is the name of our main Exchange Server (we use a mail gateway on a DMZ), and it's internal address, as well as the FQDN of our Exchange server.
Can anyone point me to any information on what is safe to remove and what isn't?
