Retrieving email from Backup Exec

Perhaps I should be a bit more specific - I have a WindowsNT server running Backup Exec 8.1 along with Exchange Server 5.5 - I would like to restore emails from an earlier backup by a particular email recipient address - is this possible?

Do you take store level backups (one store backed up) or brick level (40,000 emails, 10GB backed up)?
Store - nope.
Brick - nope.
Way to do it, move every email in the Inbox or whichever folder for the user into a temp folder. Restore ALL emails in relevant folder, sort in Outlook, bin the rubbish and move temp back again.
