While in Outlook using the user's profile, go to the Deleted Items folder and choose Tools -> Recover Deleted Items.
What is recoverable depends on how many days the Deleted Item Retention Time is set to in Exchange Administrator. You set it on the Private Information Store Properties general tab. If it is set to Zero days, I think you arte out of luck and need to go to a backup. You can also override this setting on a per mailbox basis in the mailbox Limits tab
