restoring transaction logs

i discovered that after restoring the full backups and the differential logs, we can restore transaction logs afterwards.
my question is...do i restore them individually in enterprise manager or do i restore them all together believeing they will be restored in the correct order?

You need to restore them indivigually. all BUT the last one will use the "With NORecovery" option. The last on will use the "With Recovery" option.

how do i recreate a database from the backups..?
do i first create an empty db then restore into that?
 
No. All you need to do is restore the FULL backup using WITH NORECOVERY, then the most recent DIFFERENTIAL using WITH NORECOVERY, then every TRANSACTION LOG backup since the last DIFFERENTIAL again using WITH NORECOVERY on all except the very last one. Then use WITH RECOVERY.

Refer to the Books OnLine, use the Index tab and enter RESTORE DATABASE.
