Restore of Linux Advance Server 2.1

I have implement a restoration test before server production and encounter some problem as below
Hardware configure :
Linux Advance Server 2.1
Two hard disk for mirroring with cluster array disk

Restoration Procedure
- backup the whole system but avoid the mount folder for cluster
- power down the machine and disconnect all the cable including network and scsi cable
- replace the original disk with TWO new hard disk (the same model)
- restore the backup to the new hard disk

Our problem is when we having the procedure above, the other active machine will have "check sum error" and the cluster array disk seems to be crashed. Do you have any comment about which steps make the problem arise and could you suggest a series of backup steps for our systems? Thanks
