Replacing W2k servers with 2003 servers

We have a W2k domain with 2 DC's. We are replacing these DC's with 2 new servers and Windows 2003. What is the best way to do this? Are there any best practices and should I split the FSMO roles between the two servers? Any help or suggestions would be great, thanks :))
