Replacing hard drives

I have a Dell 2650 rack mount with Exchange 2003 on it. It has a mirrired set for the OS and 3 drives (RAID 5) for Exchange. It's getting close to capacity. All the drive bays are being used. Is the following a good plan of attack?

1. Do a full backup
2. Stop all Exchange services
3. Copy drive D (the Exchange drive) to another server
4. Replace the RAID 5 drives (Drive D)
5. Copy back from step 3
6. Start all services
7. Go home and have a beer.......

You could take this opportunity to create further separation of the Exchange processes by implementing an external storage solution to your 2650 and divvying up the transaction logs, smtp queue, and the information store onto separate Raided disks. Just a thought.
