Removing Outlook Data

When I uninstall and reinstall Outlook portion of Office2000 it seems that the data is stored somewhere and comes back. I tried deleting the subdirectory ending in microsoft/application data/outlook but this did not work.

What i need to do is completely delete all of the outlook data, go to another machine and bring the data to this one.

Check the microsoft knowledge base, there is an explanation on what files outlook uses and where they are stored.
This explanation is even on the help for outlook 2002.
