Removable Backup to Disk folders

Here's my problem. I have an SBS2k3 server with an external Dell RD1000 for backup. I use Symantec Backup Exec 12 for my backup.

I have three RD1000 discs that I rotate on Monday morning leaving the drive in all week. My backup schedule / setup is as follows:

1. On Monday I run a full backup that is set to overwrite the media.
2. On Tuesday - Saturday I have a differential backup that is set to Append to media, if no appendable media then abort the job.

My problem is this. On Monday my full backup runs successfully. On Tuesday - Saturday the differential jobs run fine. The problem is after the Wednesday backup (a differential set to append) my full backup (Monday) is no longer available in my restore selection sets. It appears the Wednesday differential is overwritting part of the full backup media. This should not happen.

I just recently averted disaster by restoring my catalog file from my Tuesday night differential backup and then recataloging my media. I was able to restore what I needed but I have no doubt I would not be able to perform a complete restore from the full backup in the event of a total failure.

What am I missing. This is very unsettling. I am not a fan of Symantec and don't like the way I lose control of the media when using a 'Removable Disk' for my backup. Any guideance will be greatly appreciated.
