That depends on if you have configured Exchange to save permenantly deleted messages. If you have, then with the deleted box open go to Tools >> Recover Deleted Items.
If not, then are you backing up individual mail boxes?
If not then you will have to;
1. Do a complete backup of the Exchange server.
2. Restore the backup that contains the message you want.
3. Copy the message out of the mail box.
4. Restore the backup made in step 1.
5. Configure Exchange to keep permenantly deleted message for X number of days.
