I removed Quark Express and re-installed it (v4.1), now on a HP2500C Printer, everything prints in gray scale, nothing color?

Sounds like a driver/ppd issue. I used to have a 2500ps.
Also make sure all your settings are correct in the print options. Rule out all the stupid stuff like your output setting is for composite cmyk, and the page setup is set for the hp.
