Create a recurring task with 0d duration (i.e. milestones).
Click on Insert | Recurring Task and then, in the pop up, set the duration to 0d, set the occurrence information (daily, weekly, monthly, yearly, etc.), interval information and number of occurrences and then click on OK.
If you want to assign resources to the milestones then expand the summary task with the meetings, select all the milestones, press Alt+F10 and assign the resources you want. Because it' a 0d duration task, the resources won't have any work assigned to the task but you will be able to see who will be attending your meetings.
Frankly ... I'd create a normal recurring task and assign the resources because, in reality, that's what's going to happen: real people will spend real time at a real task.
