I have a catalog that uses CMYK product shots and a spot color design accent on each page. It was just determined that the printing should be done in 2-colors (K & the existing spot color). I know I can run a batch/action in Photoshop to convert the CMYK images to grayscale pretty quickly. Is there a quicker method in InDesign that can print CMYK images as Black/halftones - - while still maintaining the spot color used elsewhere in the document?

No there isn't. I'd recommend the batch conversion method in Photoshop.
