We are getting ready to power down our old meridian and pbx units to take them apart and sell them, not sure exactly what is the best way to do this or how to even go about doing it? If anyone has any suggestions or ideas let me know

What sort of power do you have going to those cabinets? AC or DC, batteries, rectifiers?

Unplug. I would wait before tearing them down too far - someone may want to arrange to have them shipped in columns?

Make sure you have the software media, keycodes, passwords - a lot more value if someone can just take over where you left off.

I dont know what kind of power its plugged into the wall. Does it make a difference and is there any type of commands that I need to go into the PBX itself in order to prep it for shuting it down.

No prep commands. You just unplug it. There is no "shutdown" routine other can killing the commercial power.

pbxn was probably offering caution that DC/Battery powered system are a little more dangerous, as the power can be a little mysterious - you may think you have it down, but the batteries are still in-line. My advice is have an electrician sent to the site to remove all power. It may be hardwired and cannot just be unplugged.
