I have seen this option when you connect by DTE but i never tried it and i am not even sure you can change it.
But i do not see why this should be changed anyway.

I got jitter on my ip phones, everything is connected on a Cisco 3750 pings are slow and they vary from 1ms to 3ms, other equipment on the network is pinged under 1 ms

3ms is nothing, but you need to make the port on the Cisco auto negotiate, but I have also seen pinning it on 100 full fix issues like this too

I would set the Cisco port to 100 full. Cisco has always had auto negotiation issues with non Cisco devices.

I haven't had any problems with the 3750's on this.
I always left them on Auto, and 3ms is indeed normal for the IPO.
