I've never found a way to do it completely to my satisfaction but if you untick "Autoformat table" and make sure that "preserve formatting" IS ticked, most changes will stay - but there may be some stubborn little bu%$ers that refuse to keep their formatting

All that i'm doing is removing all borders, and wrapping text and moving to top in the first three columns. It loses it all as soon as I select new data!
I see what you mean - I can get bolding to stay and some of the gridlines - but only the exterior ones - the interior ones always pop back
If it is a table that will not change in size, you could always refernce the cells (ie =A5 etc) underneath it and then hide the rows that the actual pivot table sits on - then it's just a case of formatting your formula cells
