Peer-toPeer Gigabit File Transfers

Am receiving 2 new Dell PowerVault 775N Network Attached Storage Server with about 5.5 TB of storage from Dell CX400's. This is replacement equipment coming from Dell in a swap-out of their failing 660's and 224's that I currently have. Problem is that I have about 4.5TB of storage (setup in striped volumes) to migrate to the new stuff. Would like to use peer-to-peer gigabit connections in all of this equipment to do volume to volume copies. Our firm does not have a gigabit lan nor supporting hardware for it. Servers for the 660's is windows 2000. The 775N's have Windows Storage Server 2003. I can pull all of this offline for the migration. Can I use Cat 5e or 6 cables directly into the the 10/100/1000 nics or do I need additional hardware? Thoughts/comments/solutions?
 
Tried the Cat 5E cable between them and can not communicate with the 2 w2k boxes. Both have static IP addresses using tcp/ip. What am I missing?
