When using the Gigabit adapter under Sniffer Pro the Packet Generator option is grayed out. Is is because with the Gigabit adapter you can't generate packets?

You may be using Sniffer Distributed; there is NO packet generation capability in Sniffer Distributed.
For Sniffer Portable (version 4.0 or newer), you have to put the Gigabit card in traffic gen mode. Click on the Tools->Options menu, select the Gigabit tab, and enable the 'traffic gen' radio button (which disables packet capture).
