Outlook formatting

1) Is there a way in Outlook / Exchange to configure the length of a written line before a word wrap occurs at transmission time ?
I'd swear that there was a menu item in Outlook, but since we moved to Exchange
(and had to reconfigure everything!), I can't find it.

2) When I receive a message in "text format" (not html) and that I do a reply, fwd or a print, Outlook / Exchange usually "word wraps" the lines of the email, and does
not seem consistent (doesn't cut at the same column everytime). Why ?
Is there a way to stop this ?
I don't remember Outlook doing this before Exchange was installed.
