I gave my self read access to someone's mailbox through AD account. In outlook I can open his inbox and read his mail but I cannot see an inbox folder in the folder list pertaining to his email inbox yet I am seeing his email.

And now that I can read his inbox how do I save it to a pst???

You could just add him as an additional mailbox, so his mail box appears in your folder list then export to pst. Right click on Outlook, properties, edit your Exchange Mailbox, More Settings, Advance, Add Additional mailbox.

Restart Outlook mailbox should appear in your folder list and from there you can export to pst.

Or you could create a new set of personal folders (pst) and then copy the mail items to there.
