Within an NT domain, what is the recommended method of applying security to network shares? Should the security be share permissions only, NTFS permissions only or a combination of the two.
What are the pros and cons for each method?

Depends on the situation (remember the shared resource will also be accessible or not when logged on locally to machine it lives on - server or workstation - so you may need appropriate security settings for local users. And any restrictions you apply to security & share - the most restrictive applies - so user with full permissions to share but no permissions to actual filestore will not be able to access share over network).
