How do you change the setup of SQL Server to allow foreign characters such as ä, ö, å?

Select a different collation type when creating the database, table, column or when installing to make it the default and server wide.

or if one character set will not contain all the special characters you need, then use unicode datatypes such as nvarchar, nchar and ntext.
