I would like to have all incomming calls sent to Voice Mail during the evenings on a Partner ACS R5.0. The manual leads me to believe that #504 will do this but does not explain how.

You need to assign the lines to the vm hunt group (#206, 7, line #'s, "1" to assign). Assign a night button on ext 10 #503, and set the vm hunt schedule as required #507. Delay rings for day and night are set up #506.
I don't know how much you have set up so far, so there you go. #504 sets up night service group extensions, ie these phones will ring in night mode even if they are set to no ring.
