new 2003 server, couple questions before installing

Can you install AD and not be at the clients site and then bring the server to the clients site and point the machines to the domain instead of the workgroup.

I'm unsure of DNS and how to use this role on the server and if it will be needed. The client currently has a firewall in place that also servers as the DHCP server, but I want the 2003 server to act as the DHCP server.
I guess I'm looking for recommendations on how to approach this task. sort of new to server side.

Sure you can do this. The only thing you will probably run into is having to install a loopback device. AD doesn't like being installed when the machine isn't connected.
