speaking about sniffers, i'd recommend using network chemistry's packetizer. it's built on ethereal code base, it's free and much easier to use than ethereal itself. still, a sniffer is not a voip monitoring tool, it does not include real-time qos monitoring and so on. though it helps enormously with troubleshooting, i agree.
