Have approx 200 users ,25 servers
Currently I have a 3550 layer 3 switch and have just purchased 12x 2950 switches and 4x 3500 switches to completely upgrade our network.
These switches will cover all locations at our premises.Best case scenario-How many vlans do I create and who do i assign to which vlan i.e at the moment all servers and all users are on the same vlan.
Presently we have a vlan 3 configured which =all users +servers
Vlan 2=production floor which have IP Label Printers and any production floor communication devices all of which access as400 server.
Mail server,file and print server and as400 server are most frequently accessed servers by all users
 
Vlan creation is up to you. I usually make 1 vlan per floor in the buildings I support, but I only have approximately 80 users per floor. Not including PC's and redundant connections. I use a 24 bit mask for ease of configuration and troubleshooting. With the quanity of servers you have, 1 vlan for them as well. Keep all server traffic on 1 vlan. Just an idea of what you can do.

* Keep enterprise servers (Mail server,file and print server and as400 server are most frequently accessed servers by all users) into one vlan.

* Try not using VLAN 1
* You may want to create a management VLAN as to monitor your devices via snmp or whatever means you may have thought on.
* Way too many switches! if I may say, didn't you consider a 400X?
* Have you considered L2 & L3 redundancy?
* What about security, are you using a firewall?

Wow... A lot of switches. I would suggest getting a faster layer3 switch than the 3550 if it's going to be doing a lot of intervlan routing. You can then run HSRP between that faster switch and the 3550 for redundancy purposes. I'd look into the 4507 or a used 6509 switch.
