I'd like to schedule our servers to reboot during the weekend, for performance improvement.

I'm rusty on the commands and syntax.

Any help appreciated!

Create a batch file called reboot.cmd as follows;

SHUTDOWN /R /T:10

This will cause the server to begin shutdown and reboot after 10 secs. You can also use the /C parameter to force close of all open applications (optional)
You can then schedule the task at whatever time you wish to run it.
Hope this helps.
