Multiple sites on 1 IIS 2

I would never use the "default" site when setting up IIS. Disable that one and just add a site for each web site you want. Under advanced settings for each you can add hostnames that will publish the pages in that website to the users browser.

Bring up MMC (right cilck my computer and "manage") and in the "services" main group you will have a group for IIS (near the bottom). Expand that group and right click-add... Add a couple sites, edit your hosts file (skip this if you have DNS already set up to the webserver) and test it out.

You use hostheaders to host multiple domain/sites on hte same server.
