I am setting up a separate network for tape backups by installing GB cards into our servers and assigning them IP's on a different subnet (10.3.x.x/14). The GB cards connect to a separate GB switch that is not on our production LAN (10.10.x.x/14).

How do we keep Windows from dynamically routing between the two nics/subnets?

Don't do anything. If you haven't enabled and configured any routing protocols (rip or ospf) it will not do any dynamic routing. Just setup whatever static routes you need. (which shouldn't be any)

Why the Gigabit for backups?
