Multiple Domains in Exchange 2003

I have an SBS2003 server with 30 domain names set up within exchange server, can receive mail for them all.
Am not able to send mail using outlook from other email / domain address other than the defult address for the users. The from field does not work or allow you to choose which address to send from i.e xxxx@123.com is fine but mail from xxxx@1234.com can not select in outlook.
 
I am not sure if this will work when using Outlook and sending directly through Exchange, but when you compose a new e-mail message, click on View->From Field, and enter in an alternate SMTP address.

Exchange might just swap in the primary SMTP address or deny it, I'm not sure on that. If you were sending via SMTP (not MAPI), and the mail server allowed the relay, you could certainly enter in any from address you like.
 
In AD, you can can change the default smtp address of the user. However, the user can not himself/herself change it on the fly in the email client (at least I haven't found out how yet).
