Missing fonts in some programs on Windows 2000 Server

I recently installed MS Word 2000 and MS Publisher 2002 on my Windows 2000 Server because it is so much faster than what the programs were on before. However now when I open either program none of the fonts that are in my Windows font folder are in the font list in the programs. How can I get these two programs to see the fonts in the Windows system folder? Any help will be greatly appreciated!
